Pulut hitam (black glutinous rice) is an ingredient often featured in traditional desserts. One popular Malaysian dessert, aptly named “Pulut Hitam”, is a dessert soup made by boiling the rice with Gula Melaka (coconut blossom sugar) and rich coconut milk.
Inspired by this dessert, these Pulut Hitam cookies are made with black glutinous rice flour infused with the fragrance of Gula Melaka and chewy shredded coconut.
